Red Velvet Pancakes

All it took was one trip to IHOP and I was hooked on red velvet pancakes. Red velvet is my favorite type of cake, but in pancake form? I couldn’t resist. Here is a quick and easy recipe that I use to make my own red velvet pancakes with a cream cheese topping. My mom requests this from me all the time when I’m home from university, so I thought I would take the opportunity to share it with all of you before the holidays. I, myself, will probably be making this for my family on Christmas morning.

Pancakes:

  • 2 Cups Red Velvet Cake Mix
  • 1/2 Cup All-Purpose Flour
  • 1 1/4 Cup Almond Milk
  • 1 Egg
  • Nonstick Cooking Spray

Topping:

  • 2 Cups Powdered Sugar
  • 2 Tablespoons Cream Cheese Frosting
  • 1/4 Cup Water
  • 1/2 Teaspoon Vanilla Extract

Directions:

  • Mix milk and egg in a large mixing bowl
  • Slowly add cake mix and flour while mixing
  • Spray a skillet or griddle with non-stick spray and pour pancake mix into pan, creating a circle about 3-4 inches in diameter
  • Let cook until bubbling and fully-cooked on the underside then flip and repeat
  • Remove from heat
  • While cooling, prepare your topping
  • Mix powdered sugar, water, and vanilla extract in a bowl
  • Add cream cheese frosting and beat for 2-3 minutes
  • Drizzle over pancakes
  • Sprinkle powdered sugar on top to taste
  • Enjoy!
